Soup is an essential meal during the cold months. Whether it’s meaty or creamy, it just makes a person feel cozy. On Thursday, January 26, The Canyon Cookers at Soleil Laurel Canyon hosted a “Clean the Pantry” soup tasting. Since the capacity for the tasting was limited to 40 residents, attendees had to purchase tickets and “clean their pantries” by bringing two of the same item to contribute to the soup. One item became an ingredient in the soup and one was donated to MUST, an organization committed to helping individuals and families in need.
There were 38 tasters and not all of the items were used, so The Canyon Cookers were able to donate 45 items to MUST.
The tasters received a half portion of three varieties of soup. They made a unique yet tasty fish stew that had fennel, orange zest and anchovies in the recipe. Another was a hearty beef stew with an array of donated noodles. The third soup was a “Pantry Soup,” which included everything that the attendees brought along with some things that The Canyon Cookers purchased from Publix. The Canyon Cookers also had freshly made rolls and crackers to go along with the soups. The 120 plus rolls that they made were gone by the end of the tasting. It was certainly a fun and delicious evening!
Soleil resident Eber Lester and activities director Sue Dean started The Canyon Cookers two years ago. The group hosts tastings, demonstrations and cooking classes using the community’s teaching kitchen.
The teaching kitchen is not the only great amenity at Soleil Laurel Canyon.
